We are looking for a talented Junior Sous Chef to joinour pre-opening team. The role will report to the Sous Chef andExecutive Chef. Conveniently located adjacent to Rome TerminiStation and a short distance from the Colosseum, the 238-room HyattRegency Rome Central is a contemporary 5-star hotel offeringpremium business services and one of Italys most dazzling leisurerooftop experiences. The hotel is also featuring a SPA, 5 food& beverages outlets and more than 1000 sqm events venues. Mainduties and responsibilities: - Assist in food preparation andcollaborate with the Sous Chef / Executive Chef. - Support thecreation, tasting and implementation of food menus and buffets. -Produce high quality dishes and buffets for customers in both,design and taste. - Oversee and supervise the kitchen staff andfood production. - Check daily MEP to ensure sufficiency whilefocusing on cost and waste management. - Spot check recipecompliance and update where necessary. - Assist with inventory,ordering, supplier relationships and management of supplies. -Comply with hotel security, fire regulations, all health and safetyand food safety regulations in accordance to local legislation andlaws. - Report maintenance, hygiene and hazard issues. - Able tosupport kitchen operation during high volume. - Ensure the qualityof food served. - Offer suggestions and creative ideas to improvekitchen performance, menu optimization and service levels. -Monitor and maintain the kitchen equipment and report damages,follow up on repairs or replacement. - Keep workstations clean andsanitized and comply with food safety standards. - Lead by exampleto deliver effective and efficient dining experience. - Establishprofessional relationship with the team and provide educationalsupport to develop skills and talents. Skills and requirements: -Minimum 3 years of experience in a similar role within aninternational kitchen environment. - Knowledge of Asian fusioncuisine is an advantage. - Excellent communication skills in bothItalian and English. - Proficient in using kitchen managementsystems and standard computer applications. - Experience incoordinating medium- to large-sized banqueting events. - Strongorganizational, time management and leadership skills. - Solidunderstanding of HACCP, food hygiene and local safety regulations.- Work weekends, holidays and on shifts when required.
